and why are some plants grown in a pot and then a pouch is placed to provide that humid environment?

i am trying to grow a garden, any suggestions, and well learn, not newly to plant and grow plants, but the biology of them and if any chemistry exists, well that too...all the conditions, the branch cutting, soil stuff and etc etc...
Answers:    Wow... plant biology is a huge subject, way too much for here.

I can make available you basic answers though.

Cloning is usually done by taking a cutting from an established plant and rooting it to produce a exotic plant. This is done because some plants, especially hybrids, do not produce viable seed. The seed would any be sterile or not produce the same plant.

Crossing involves using the pollen from one plant on a different plant, producing seeds that will grow into a hybrid cross of both plants. Seed produced by these hybrids are usually unfeasible - see cloning.

The plastic bags you mention are just to provide a humid atmosphere. Some plants prefer this, or while rooting a adjectives, it keeps the plant "watered" until it grows roots that can take the river up from the soil.
