Home Depot sell a water based polyurethane.
Yes. We used Ecoprocote Acri-soy.
We got it at Home depot, but I couldn't find the link.
It is really great because it is eco-friendly: marine based and made from soy.
It dries quickly and cures in a few days.
We first used it when we had to build new cage for our pets.
I really liked it and have since used it for other household projects.
If you can't find it at home depot, try other hardware stores.

Answers: Are you kidding. Soy? Polyurethane is petroleum base. Soy is vegetable matter. They are not even in duplicate ballpark.
