Answers:    Same as the thermostat in your house. Inside at hand is a strip or coil of metal, but it is actually two different metals. The metals expand and contract next to heat and cold at different rates. So, at 180 degree, say, the bimetal coil will disfigure to a certain scope, and deform more at 220 degree. The deformation of the coil causes physical movement which trips a switch, a physical switch. If you don't hold a digital thermostat in your house, filch the cover off and look at this process.
