the manual says that you obligation a miniumum ceiling to extractor of 750mm but this puts it too low to operate the hob.
Answers:    Try getting in touch with the businessman of the hood & check with them, as I've no doubt that it will invalidate any warranty on it if you start making your own modifications to it.
I don't construe how 750mm makes it too low to operate the hob? are you measuring it correctly? as 750mm is the standard height above sea level of a stainless steel splashback which the hood would normally sit on top of.
Are you getting 750mm mixed up beside 75mm?
yes you can do this quite easily near a jigsaw that has a fine steel cutting blade.It is better to do it in the past you peel off theprotective show from the chimney section.
I install kitchen appliances for a living and do this nearly every day. Yes you can if you want to but 750mm above a gas hob ( no lower ) is the optimum hight,you can mount on the ceiling if you so aspiration but don't expect it to do it's job correctly!
