Answers: After you peel the potatoes, keep hold of them covered in river so the air can't draw from to them. The dark color you see is a criticism between potato starch and the oxygen in the upper air - similar to the reaction that cause rust. No air, no fogginess - problem solved :-)
That's a reaction to person expose to air...munificent of like apple slices turn brown. Merry Christmas
