buy some onion sets, plant them during the proper growing season surrounded by your area
after planted and growing, you can pick and use any time.. and even the tender green tops.. approaching chives
yes, you do have to dry them if you want to store them for more than a week.. to prevent fungus/rot... but you can use\eat them during any part of a set of the time... drying is only because if you try to store a bunch of them for a long time, they're too moist, they'll rot... lately like potatoes, yams, etc.
I suppose you have to continue for it to flower and then collect the seed.
