Assuming a spacing of 4 or 5 inches you should plant five to ten feet of row per soul for fresh beets. If you plan to store, can or freeze then ten up to 20 feet of row per party. All of it as you can freeze it pickle it Etc :)

Answers: Just stick a row in, later a few weeks later, another row, and so on. Then, you'll have plenty of salad leaves to pick and the beets, too, and you can adjust how abundant you sow as you learn how many you chomp through. Beetroot seed is one of the cheapest around.
