Answers:    When they are getting to a biddable size, you will start to notice that the red end of the carrot that the leaves grow out of is sticking up out of the ground somewhat bit. Judging from the size (how wide the ginger part is) you can pretty in good health judge how big your carrot is. You don't want to verbs it too soon, but if you leave it too long it will become woody and tough to devour. If it starts to grow out of the ground and isn't large ample, you can pile some more dirt onto the top. You have bought carrot from the grocery store most likely, so you know how big you are looking for.

This go for any other root vegetables like radishes too. They start to poke out of the ground when they are in place, and go woody if you head off them too long.

Carrots are quite slow-growing so leave your job them as long as you can, pretty much. It will take almost a full season for them to catch to a good size.
You should know how to dig around the carrot a bit to see how big it is. If it is too big it may become "woody" inside, or start cracking up the side. There is no correct time to pull the carrot up just back first frost, and before they are too big and crack.
