How do you order grass surrounded by between flowers? I just bought a home this previous winter and did not...

I just bought a home this previous winter and did not realize that the home I purchased had abundantly of nice flowers and plants all around the house. I am NOT a gardener so this is valid new to me. Although they are striking I'm finding that they have grass growing between the plants. I enjoy a grass trimmer, but I'm afraid I'm going to cut the plants if I use them. How do I manage the grass minus killing the plants and flowers?
