I'm growing these spouts and the plants are mostly between 2 and 3 inches from leaf to root. Are they done? Also, they don't hold much flavor if I only munch through one (and I know, you don't eat the hulls...I didn't). What's the treaty? Can I "harvest" them?

You're growing broccoli plants for the leaves?
I grow broccoli...but I grow it for the broccoli, not the sprouts. Mine are about 4-6 inches right very soon...but, no, they're not done. They will grow 2 to 3 feet towering, and a couple feet widespread, and the main stalk will grow to nearly one inch thick, and it will cause a big broccoli "flower" or "bunch" at the top. I harvest (cut it off) when it looks resembling the broccoli you buy in a store - earlier the flowers open.
Then it will net smaller "flowerettes" off the side shoots after I remove the prime shoot.
I've never eaten the leaves. I grow Lettuce and Swiss Chard for greens.
Answers: If your sprouts have leaves you consent to them grow to long. You need to collect them three to five days after they sprout from the seed. (about an inch or so long) Otherwise you are intake a plant not a sprout.
