There are many small plants that will do contained by zone seven A by your pool.

Any of th dwarf evergreen shrubs such as Arborvitae, dwarf Hinoki Cyress, Sunkist Arborvitae, dwark Hemlock, Mop Cypress and a Ruby Loropetalum or Chinese Pizzazz.
These are all low preservation shrubs and will stay green year around.

Now as far as exotic plants try the Fatsia, Ginger, Florida Anise, Hibiscus, ornamental grass have a lot of variety, Clematis, or a Cast Iron Plant.
