My grandma did, I do . I also use the tops in my cooking.

I was qualified to tramp them over when they start to change color and dry. This allows the onion to retain its moisture instead of trying to keep the shoots alive. Fold over afterwards 1 week later dig up but start out on ground.
Same way you preserve garlic.
