Some of the leaves are putting my other plants in the shade, and I wanted to know if I would be capable of cut some of the leaves off.

Answers:    yes and infact it is a good impression to cut some off.That way more dynamism and food goes to the zuchini and its not waisted going to a bunch of leaves.Dont cut all the leaves bad,but you should cut some off especially the bigger ones,cut them down as close as possible to the base of the plant.
You will procure bigger and more zuchini,plus they will be better.
