Its been in the order of 20 years since I last made my own maple syrup. I'd resembling to show a visitor from overseas the full process of making maple syrup.
Given that we have be having a honestly warm winter here contained by Westchester county, I'm trying to decide what the best date would be for drumming the trees.
I was thinking nearly tapping the trees subsequent weekend (Februrary 9th or 10th).
Is that a good time, or should I keep on another week or two after that?
Thanks!

SUGAR SEASON BEGINS!
I don't know what your weather is like right in a minute - but when you tap is related to the weather, not the date.
But the best time is when you're expecting a string of days surrounded by late winter, when temperature are above freezing during the day, but below freezing at hours of darkness.
And of course, do it in the past the buds break. After that, the sap gets bitter (comparatively speaking).
