My bell pepper is about 2.5 inches long and has be a nice green for a month. Last week it turned brown and now it's turing red. What's going on?
green is the color of an unripe pepper. pick them sooner.
As long as the brown is not a sign of rotting, and the fruit remains firm and shiny, after your peppers are just ripening.
They bite much better, in my opinion, when they dance red. Green peppers taste coarse and unripe compared with sweet red peppers.
Answers: A bell pepper is considered 'ripe' when it turns red. Actually the green pepper is not the final stage...only the growing stage. When it reach the ripening stage it will turn a brown color and then red.
The pepper is still good at any stage of coloration. It taste a bit different when it gets red, but it depends on your taste nouns as to when you pick them.
I pick mine at both stages...red and green. Makes a nice color change in your dishes.
