Answers: Both answers below are valid, as the pink color to the spackle is indeed a dry-time indicator. The DAP brand mark "DryDex" spackle is just such a type of spackle.
That mortal said... there are other things which are high-status in a spackle. In my experience, the DryDex doesn't work completely well. It doesn't spread extremely badly well.
A better spackle is DAP's "Crackshot" spackle. It's get a much, much better consistency, and will be much easier to spread and work with. It's a touch more expensive (just a few cents), and a vastly superior product. If you're worried about the drying, a short time ago let it sit overnight to dry, and you'll be fine.
The pink stuff is like peas in a pod as the white stuff except it goes on pink and dries white. It's only an indicator to let you know when it's dry and prepared to be sanded.
