I have a small bathroom and I want to board stale the horrible pipes that run underneath the sink (you know the type!). I just want to cover them so that I don't see them anymore. Any tips and insist on, also what wood should I use?

i would use 6mm ply much better than mdf and more water resistant confidently cut less dust
will necessitate a supporting frame to attach it too made of some softwood you have already painted for protection

Another impression outside of your current options:
Buy a curtain of any type, design you resembling but it is not see-through. Attach velcro to the sink outskirts - sticky type and sew the other velcro to the inside of the curtain, attach the curtain around the perimeter of the sink - looks fitting, little work, and gives a location to storage toilet rolls, plunger, etc.
