Answers: We have newly finished doing ours. What we had to do is put current joists along side the prehistoric ones. You will be amazed at how much the old ones will own sunk in the middle. Don't consider using them for anything except continuing to hold the ceiling up. Don't nail into them.
Our spans be in the region of 10 to 12 ft and we have to use 200mm x 50 timber. Try and buy the lot in one hit and own them "Justified", They will all arrive at one and the same size which makes everything from afterwards, on very trouble-free.
You will need two joist where a wall is to sit on it and other think more or less what you are going to nail your alien floor to.
You will need two together any side of the stair opening as capably.
You have to put surrounded by new ones to "float" the modern floor above the existing ceiling joists, check your come first room .
