If you want to splash out Mahogany wainscoting is so beautiful and decadent! However for something a bit more modest and still lovely you could look at soft maple. However, many relations go for the "paint grade" wainscoting but I'm not a devotee of white so unless thats what you really want I think it looks a bit boorish!
