Both of us aren't sure about the red carpet issue because she lives in a town really close to Los Angeles, so they are kind of use to adjectives that red carpet, celebrity stuff. But for the seaside theme, what kind of dress or outfit??

for the seaside dress i guess she should wear something nice and looks like a dress you can wear at the beach but even prettier. also if you did the red mat theme you don't have to hold the color red, pick like a fun color or try a rindbow kind it will be so much fun Beach subject, xD, some people may not wanna dress fancy. plus the food is good. Make Hawaiian Chicken, Buy plastic tiki cups. hold a Luao. and do a limbo game.
