Do I put the dry wall on the walls first or the knotty pine on the ceiling first?
Answers:    There isn't really a rule for this one and there are good arguments for both.

If you put up the pine first, you will hold more nailing surface at the ends. Also, the ceiling is traditionally put up before the walls. This is compulsory with drywall, not so much if you are not going to have a finished collective at the corner of the wall and ceiling.

I prefer to put up any wood after the drywall is hung and finished. Finishing drywall generates a lot of dust. Static electricity will do some of this dust to settle on the wood -- even on a ceiling. It is nearly impossible to get every last speck past its sell-by date, especially if there are grooves and joints contained by the wood. By putting up the wood after the drywall finishers are done making a mess, this issue is avoided and you will have a much nicer finish without adjectives the work of cleaning.
Put the lid on first and then but the walls..you may even want to put a small piece of plastic up there for finishing unless your planning a crown molding. nite I wouldn't put it up at adjectives anyway - it's so outdated - unless you're building a sauna.
